If Mikkeller is the mad scientist of European brewing, these are his apprentices. To Øl (Danish for Two Beers) is another brewery started by two former students of Mikkel, Tobias Emil Jensen and Tore Gynther. The two started talking about the state of Danish brewing and how it needed to be shaken up - and soon all three were spending the night in their school, brewing up their mad batches of beer. They kept on home brewing, and in 2010 they launched their own phantom brewery, which Mikkeller helps distribute overseas. Their beers are all about fresh ideas, fresh tastes and a fresh approach. In To Øl's words: "Our goal is to provoke and push the boundaries for the very perception of beer. Meanwhile we just want to have fun doing it. We should never forget that we are making beer and not politics!"
